This cake is a beautiful take on a classic lemon cake. It comes with the most incredible freeze-dried plum glaze and decorations, which offer an intense colour and true plum flavour.
Just add butter (or oil), milk and plums of your choice!
WHAT YOU'LL GET
Lemon Cake Mix
-A blend of ancient grain spelt flour, blanched ground almonds, finely ground polenta, cane sugar, baking powder, and a pinch of salt
Plum Glaze Mix
-Pure Black Doris plums (freeze-dried and powdered) blended with double-milled icing sugar
-Pure freeze-dried Black Doris plum slices
Non-stick Cake Tin Liner
-For an 8 inch (or 20cm) cake tin - so there’s no need for greasing!
ALL YOU'LL NEED
-190ml or about ¾ of a cup of regular or any dairy-free milk
Butter or oil
-115g of butter or ½ a cup of coconut or rice bran oil
Plums + Lemons
-4 ripe plums or 200g of tinned plums, the juice of 2 large lemons (about 90ml) and the zest of 1 lemon
8 Inch (20cm) Cake tin
-This mix will also make 9 - 12 cupcakes
